How to Cook Hot Jamaican  Cornmeal Porridge

ingredients

  1. 1 cup of yellow cornmeal
  2. 4 cups of water
  3. 1/2 a teaspoon of salt
  4. 1 cup of milk
  5. 1/2 cup of sweetened condensed milk
  6. 1 teaspoon of vanilla
  7. 1/2 teaspoon of cinnamon
  8. 1/2 teaspoon of nutmeg
  9. Sugar to taste

How to Prepare

  1. Mixing  – Mixing the cornmeal Place the cornmeal in a bowl and add 1 cup of water
    Mix the water and cornmeal together
  2. Boiling – Boiling the water Mix one cup of milk and three cups of water in a saucepan
    Bring to the boil
  3. Add the Cornmeal– Adding the cornmeal Once the water and milk has boiled turn down the heat and stir in the cornmeal mix
    Simmer for 10 minutes, stirring regularly
  4. Other Ingredients – Adding the other ingredients Stir in the condensed milk, vanilla, cinnamon and nutmeg.
    Simmer for a further five minutes

Serve it hot.

Jamaican Breakfast: “Run Down”

If you want to embrace the Culture of Jamaica, then you have to eat some Run Down at list once on a Saturday/Sunday Morning with some Fried dumpling. Seriously it hits the spot and may send you back to bed. Lol Don’t worry it won’t give you a runny stomach. The name comes from the rich gravy of the meal.

You will need…

  • 3 tablespoons of freshly squeezed lime juice
  • 2 lbs. (1 kg) mackerel or other oily fish (salt fish *boneless* works good too)
  • 3 cups (750) coconut milk
  • 1 large onion, diced
  • 2 cloves garlic, sliced
  • 1 scotch bonnet or jalapeno chili, deseeded and minced
  • 1 lb (500 g) ripe tomatoes, blanched, peeled and diced
  • 1 tablespoon cider vinegar
  • 1 tea spoon dried thyme
  • Salt and freshly ground black pepper (no salt if you are using salt fish)

How to cook Jamaican “breakfast” Run Down

  • Step 1 –Pour the lime juice over the fish fillets in a shallow bowl and set aside.
  • Step 2 – In a large, heavy skillet cook the coconut milk until it turns oily about 5 to 7 minutes.
  • Step 3 – Add the onion, garlic and chili, and cook until tender, about 5 minutes.  Stir in the tomatoes, vinegar, thyme, and salt and pepper.
  • Step 4 – Add the fish, cover and cook until the fish flakes easily when tested with a fork, about 10 minutes.

What is “Run Down?”

jamaican run down Jamaican Run Down is a very popular Jamaican Breakfast. It contains Salt fish, fried dumplings, and some tomato and onions for seasoning. Some say they do not want to eat “Run Down” Because it is a “Ghetto” food. In other words it’s a dish mainly eaten by poor Jamaicans. To me…this is a load of crock! Once you have some “Run Down” on a Saturday/Sunday Morning, you will eat it over and over again. The reason is…its tasty, easy to cook, and it hits the spot. I love me some “Run Down.”

You will need…
